Bing cherries


This recipe enables those with finite baking experience to create a delightful dessert that is well-suited for the warmer months. Summer presents an excellent opportunity to savor cherries, as many sweet varieties are plentiful. Among the most favored options are Bing cherries and Rainier cherries, both of which are highly regarded. To achieve the best presentation and flavor in this recipe, it is recommended to utilize Bing cherries or any fresh cherries that are deeper in pigment and provide an intrinsically sweet taste. For those seeking a tart flavor, fresh Montmorency cherries could serve as a fitting substitute.



Ingredients and Preparation for the Cherry Mixture


Rinsed, pitted fresh cherries. A cherry pitter may offer increased convenience.


3 cups, pitted and halved cherries (reserve a few fresh cherries for decoration)


1/2 cup of pure cane sugar or granulated sugar


3 tablespoons of almond flour or arrowroot powder


1/2 a zested lemon and juiced


A few sprinkles of cinnamon


A few sprinkles of nutmeg


A sprinkle or pinch of salt


1 tablespoon of sweet almond oil or coconut oil


In a saucepan, combine all the aforementioned ingredients, excluding the sweet almond oil or coconut oil. Ensure that the ingredients are well blended and stirred together.


Place the saucepan over medium to medium-high heat, allowing the mixture to warm until it starts to bubble, stirring occasionally.


Once the cherry mixture reaches this stage, remove it from the heat and carefully incorporate 1 tablespoon of either sweet almond oil or coconut oil. Allow the mixture to safely cool.



An Uncomplicated Option for the Chocolate Cake


King Arthur Baking Company's Deliciously Simple Chocolate Cake Mix, Gluten-Free Chocolate Cake Mix (prepares two, 8-inch round layers), or a chocolate cake mix of choice. If preferred, use three, six-inch round cake pans for an enticing three-layered cake.



Ingredients and Preparation for the Creamy Whipped Topping


3 1/4 cups cold heavy whipping cream

1/2 cup pure cane sugar or granulated sugar

1 1/4 tablespoons cornstarch

1 3/4 teaspoons vanilla extract


In a saucepan, combine the sugar and cornstarch, then gradually incorporate 3/4 cup of the heavy cream while whisking. Heat the mixture over medium heat, continuously whisking until it starts to thicken, which should take approximately 5 minutes. Once thickened, remove it from the heat and allow it to thoroughly cool for approximately 30 minutes.


It's effective to either utilize a power hand mixer and a sturdy bowl or stand mixer equipped with whisk attachments, proceed to whip the last portion of heavy cream until it reaches an effervescent consistency. After achieving this texture, incorporate the mixture from the saucepan, and continue to blend the whipped cream until it begins to display peak formations.



Ingredients and Preparation for the Creamy Whipped Topping (Alternative)


3 1/4 cups cold heavy whipping cream

1/2 cup sieved powdered sugar


Blend the cream and powdered sugar, whisking until it begins to display peak formations. It is recommended to use a bowl that has been stored in the refrigerator until it's cold in temperature and a cold whisk for optimal results.



Ingredients and Preparation for the Dark Chocolate Shavings


A substantial block of dark chocolate, or two, 4-ounce dark chocolate bars (6 to 8 ounces)


Use nitrile gloves if there's a sensitivity to latex or simply use latex gloves if there isn't sensitivity present, so the chocolate will not melt due to the warmth of the hands.


Ensure that the chocolate is at room temperature, as cold chocolate does not peel effectively. A vegetable peeler or shaver generally utilized for cheese will make creating the chocolate shavings simpler. To create the chocolate shavings, press the peeler or shaver against the block of chocolate and gently motion from the top, then downward, and repeat. Each chocolate shaving will vary, so there is no need to worry regarding consistency. Practice will be supportive towards progress. Refrigerate the chocolate shavings until they are needed.
